Resting Coffee

In the beginning you understand that fresh is better and you buy coffee from a roaster and they ship it to you the day is roasted. It's super fresh, and then you hear, no, maybe fresher is better but it still needs to rest and age before you brew.

So the question is how long do I rest it for?

By understanding what's going on inside coffee and during brewing process you can make informed decision. 

There's a lot of CO2 trapped in beans and grounds.
 Therefore you must de-gas.

Most escapes during roasting but alot still trapped inside. 

The beans can't keep hold of CO2.

Water liberates CO2.

You'll see in bloom if you do pour over.

Med dark roast 4 or 5 days after roast good starting point.

Don't worry about Resting to perfection
With bloom and brew well.

With light and dense stretch to 10 days.

Tip: Pour a little water over grounds and then let rest 30 seconds before pouring to let CO2 come out.

Storage makes difference

If cooler longer rest

Warmer shorter rest
