Terpenes In Juniper



NYE I was at the bar and my bartender mentioned how juniper berries are a key ingredient in gin, and how the scent and flavor stood out to him. I couldn't help but ask if he had ever heard of #Terpenes. He said he had not. So I schooled him on some #terpeneeducation right there and we looked up the terpene profile in gin together on the spot.

This essential oil contains terpenes (α-pinene, myrcene, limonene, γ-terpinene, linalool, geraniol, borneol) and their proportion varies ...Pinene (alpha-pinene to be more exact) is the most predominant terpene in juniper.
Juniper then lends itself to four main areas of gin recipe flavours, namely herbal / spiced / floral and fruity.
